Skillet pasta dishes are starting to become my favorite, especially when cooking in an RV. There aren’t nearly as many dishes and the cooking process is quick and easy. Skillet pasta dishes usually cook up within 20 minutes, so when there are adventures out there to see, that’s a bonus in my book.
8 oz. wheat penne pasta
1 chicken breast, cut into 1 inch pieces
1/2 jar sun-dried tomatoes in oil
1 tsp. minced garlic
2/3 cup fat free half and half
2/3 cup shredded mozzarella cheese
1/2 tsp. paprika
1 tsp. basil
1 tsp. red pepper flakes
Cook pasta according to package directions. Sautee sun-dried tomatoes (including some of the oil from the jar) and minced garlic for 1-2 minutes on high heat. Remove from pan. Add chicken and paprika to pan and cook thoroughly. Add all ingredients to the pan, including sun-dried tomatoes, half and half, mozzarella cheese, basil and red pepper flakes. Heat over low-medium heat until sauce thickens. Add pasta and stir to combine. Serve immediately.
