We hardly ever order taco pizza at a restaurant. It’s one of those things we don’t think about, but when I do it eat, I’m never disappointed. It was time I try my own recipe for a healthier pizza with lots of veggies, so here it goes:
1 store-bought pizza crust or pita bread
1 cup re-fried beans
1 large chicken breast, cooked and shredded
1 cup salsa, divided
3/4 cup low fat shredded cheese
tortilla chips, crushed
plain Greek yogurt
Cook chicken breast and sprinkle with desired amount of paprika, chile powder, and cumin. Shred chicken and set aside.
Cover pizza crust with re-fried beans, then 1/2 cup salsa, chicken, and cheese.
Bake at 350 degrees for 15 minutes or until cheese is melted.
Halfway through cooking, add the crushed tortilla chips.
While the pizza is cooking, cut up lettuce, tomato, and avocado.
When the pizza is done cooking, add the lettuce, tomato, and avocado to the top of the pizza.
Serve immediately, topping with the rest of the salsa and plain Greek yogurt.
