Coconut Shrimp is one of our favorites. It’s really easy to make and I usually have all of the ingredients on hand. Coconut Shrimp is even one of my grandma’s favorites, so I had to make it for her as well. A family favorite!
Ingredients for Coconut Shrimp:
10 Cleaned, frozen jumbo shrimp
1/2 cup corn starch
1 egg, beaten
1 cup Coconut
Thaw shrimp according to package directions. Coat shrimp with corn starch, then dip in egg, then coat with desired amount of coconut. Place on baking sheet and bake for 16 minutes in 400 degree oven or until the coconut is golden brown. Turn over halfway through cooking.
Ingredients for Coconut Shrimp dipping sauce:
1/4 cup plum sauce
1/4 cup orange or pineapple marmelade
1 tbsp. fresh jalapeno
1 tbsp. lime juice
1 tbsp. coconut
Mix all ingredients together and serve with shrimp. Can be warmed a little bit to desired temperature.
