I always thought mashed potatoes were a big to-do and left only for special times like Thanksgiving when Grandma and I would stand at her kitchen sink and peel what seemed like hundred of pounds of potatoes so 25 people could eat for week. Turns out, when you’re cooking for 4 people in a crock pot, they’re actually pretty easy. They do take 4 hours, but can take less if you microwave the potatoes ahead of time.
3 red potatoes (I left the skins on, but you can peel if you’d like)
1/2 cup milk
1/4 cup plain Greek yogurt
1/4 tsp. garlic salt
1/4 tsp. thyme
1/4 cup sharp cheddar cheese
Cut potatoes into small slices. If you have four hours of cooking time, put right into the crock pot. If not, microwave in a microwave safe dish for 5-10 minutes to cut the crock pot cooking time in half. Pour the rest of the ingredients over the potatoes, stir, and turn on high for 2-3 hours. As potatoes soften, beat with hand mixer until you reach desired consistency. If you like more flavorful potatoes, you can always add more thyme, cheese, yogurt, or garlic. Enjoy!
