I’ve been so nervous to make a peanut sauce-based stir fry, but this recipe is so easy that I had to try it. We had a back-up plan to order pizza in case it didn’t work out, but this was probably the best meal I’ve made in the RV so far. The reason I know this? Curt said several times that this recipe should be a staple in our recipe box. Noted.
Mix first 6 ingredients together in a bowl and set aside. Cook rice according to package directions. Heat olive oil in a pan and stir fry chicken until cooked through. Remove from pan and set aside. Add peppers to pan and sautee for 3-4 minutes. Add mushrooms to pan and continue to sautee until vegetables are crisp-tender. Add chicken to pan then peanut butter mix. Bring to a boil and cook for 2 minutes or until sauce thickens. Serve over brown rice.
