Humus and Zucchini Chicken. Yes, it’s as delicious as it sounds. And twice as easy. Most of the ingredients in this delightful dish we usually have somewhere deep in the back of our fridge, which makes for a quick meal.
2 chicken breasts
hummus (I used roasted red pepper, but any flavor will do)
salt and pepper to taste
Spray 9×9 inch pan with cooking spray. Cut up zucchini and slices of lemon. Coat with olive oil and put into the bottom of the pan. Place two chicken breasts on top of the zucchini in the pan and coat with hummus. Add salt and pepper to taste. Cook at 350 degrees for about 30 minutes or until chicken is cooked through. Cover pan while cooking with tin foil so the chicken doesn’t dry out. This dish is delicious with crock pot mashed potatoes. (See recipe under “side dishes.”)
Side note: There is a little bit of chicken cook-off that cooks into the zucchini mixture, but it’s every bit as tasty. You could put the chicken on the bottom of the pan and zucchini on top to avoid this (or cook the chicken first before putting in the pan).
