An easy baked chicken recipe, this one ranks right up there as one of the best. The spicy mustard gives the chicken just enough of a zip, and paired with a side potato and vegetable, a healthy dinner just before a day of hiking makes me happy.
2 chicken breasts
1/2 cup bread Italian crumbs
1 1/2 tbsp. grated Parmesan cheese
1/2 tsp. dried thyme
sea salt and freshly cracked pepper, to taste
2 tbsp. spicy mustard
1 clove minced garlic
Preheat oven to 450 degrees. Spray 9×9 pan with cooking spray. Combine bread crumbs, Parmesan cheese, and thyme. Season both sides of chicken breast with salt and pepper. Mix garlic and spicy mustard together and coat chicken. Roll each chicken breast in bread crumb mixture and place in baking pan. Cook for 20-25 minutes or until cooked through until no longer pink.
