Peaches we purchased at a rode-side stand in Rhode Island are some of the best we’ve ever had. We got spoiled for the few days they lasted, and none have tasted better since. With the not-quite-up-to-par peaches we have purchased since, I decided to incorporate them into something. Peach Oatmeal Muffins–YUM!
1/2 cup all purpose flour
1/2 cup instant oatmeal
1/4 cup packed brown sugar
1 tsp. baking powder
1/4 tsp. salt
1/4 cup margarine (1/2 stick), melted and cooled
5 oz. Vanilla flavored Greek yogurt
1 egg, beaten
1 peach, chopped into small pieces
1/4 cup pecans (optional)
In a small microwave-safe bowl, melt the butter and let cool. Once cooled, add the beaten egg and Greek yogurt.
In a medium-sized bowl, mix together the flour, oatmeal, brown sugar, baking powder, and salt.
Mix the wet ingredients and dry ingredients together by hand just until incorporated.
Add the peaches and pecans. Do not over-mix!
Put into sprayed or lined muffin tins; fill about 2/3 full.
