I’ve never been in charge of making the sweet potatoes for Thanksgiving meal, but if I’m ever assigned the ever-important task, I will be making this recipe. They have the perfect amount of flavor and crunch to them. Delicious!
2 medium sweet potatoes, rinsed and cubed in 1-inch pieces
1 tbsp. brown sugar
1 tbsp. olive oil
1/4 tsp. ground nutmeg
1 tsp. cinnamon
pinch of ginger
sea salt to taste
Preheat oven to 350 degrees. Spray 9×9 pan with cooking spray. Mix all ingredients in bowl until potatoes are thoroughly coated. Transfer to pan and bake for 45-55 minutes or until desired tenderness. Stir the potatoes half way through. These are also great to dip in plain Greek yogurt.
