Sauteed vegetables don’t last long in our house. We usually eat about 2-3 servings per person, so I always over-do it when I sautee fresh veggies. The sauce combinations I use are always different, but tonight I made a sauce that would go with our Honey Garlic Baked Salmon.
1/2 green bell pepper, cut into strips
1/2 red bell pepper, cut into strips
1 green zucchini, cut into 1/4 in circles then cut in half
1 package mushrooms, sliced
1 tbsp. lime juice
3 tbsp. low sodium soy sauce
dash of pepper
1/4 tsp. garlic salt
Heat olive oil in pan over medium heat. Add soy sauce, lime juice, garlic salt, and pepper. Sautee peppers first for 2-3 minutes. Add zucchini and sautee for 2-3 more minutes. Finally, add the mushrooms to the pan. Sautee 3-4 minutes longer or until vegetables are desired consistency. Enjoy!
You could also add broccoli, yellow squash zucchini, carrots, tomatoes, etc. All vegetables are welcome!
